How Does Baking Powder Work?
Baking powder works by releasing carbon dioxide gas when it gets wet and heated. Those bubbles expand inside dough or batter, helping it rise.
Why it reacts
Baking powder contains an acid, a base, and a starch that keeps the mix dry. When liquid reaches the acid and base, they react and make gas.
Why heat matters
Many baking powders are double acting, which means they release some gas when mixed and more gas in the oven. That second reaction helps baked goods finish rising as they set.
